The essence of the agricultural world of the Amalfi Coast - somewhat changed but still alive and kicking - is to be found in the scenographic terraced vineyards and lemon orchards, as well as in the depths of the chestnut groves that mark the boundary between hill and mountain. It is a discreet world, poorly known and not at all eye-catching, a legacy made of expertise, practices and customs that silently, day after day, mould the landscape and guarantee the survival of its inimitable, extraordinary flavours and agricultural produce. There would be no accounting for the DOC (protected designation of origin) wines, the IGP (protected geographical indication) lemons, the delicious cheese and the chestnuts were it not for the indigenous vines planted by the ancient Romans, were it not for the beautiful to see trelliswork skillfully erected to protect the vines and lemon trees, were it not for the times and modes and tireless care that centuries-old cultivation methods call for, were it not for the techniques and processes born of local expertise and practice. At sea, at the foot of the hills, fishermen continue torch-fishing for anchovies, while the wood keeps supplying (with difficulty at this point in time) the poles for the terraces along the hills.
